Chocolate berry pavlova cake
Decadent chocolate cake topped off with a generous cloud of meringue that’s crisp on the outside and pillowy on the inside. If that’s not reason enough to love this cake, the luscious vanilla whipped cream and the copious amount of berries will sway you surely.
But because you're here, I'm guessing that you're sold on this cake already.
If I was pressed to describe this cake, I would say that it's as if a pavlova and a chocolate cake had a baby. A tasty one. A baby with five layers of sheer and utter joy.
I know what you're thinking; five layers are way too many. Maybe you're thinking that despite how great it sounds, you might search for something easier to make.
But the thing is, this meringue cake is actually incredibly easy to make.
In fact, I thought about this cake when I was approached by a large department store in Colombia to create an easy recipe for mother's day. The brief was to make a cake that would take less than 20 minutes of prep work and would still seem as if you spent all day in the kitchen.
But because of the current situation, Mother's day was postponed in Colombia until August.
Not to worry, I have this amazing pavlova chocolate cake to comfort me. All for the best, because probably by August, things will have gone back to normal and I can spend time with mom, and of course bake her this cake.
It's great to make for Mother’s day if you still are celebrating in May, but it’s also a great showstopper to add to your repertoire for any day of the year. It’s beautiful, it’s easy to make, and of course let’s not forget that copious amount of meringue, the scrumptious chocolate cake, the whipped cream, and the berries.
It really is all the things I love, baked together.
As for the fruits, you could go any way you like I. When asked what are the best thing to cover a pavlova with, I would generally say that for me that would unequivocably mean strawberries or berries, but the truth is that you can customize it however you like.
The only word of caution I would give is not to chose fruits that have high water content, as they will melt your meringue. So unless you plan on eating it in one go, it’s just something I would avoid.
As you can see I added berries. Mostly because I feel that berries belong with chocolate, think chocolate fondue. But then again meringue, berries, and cream also belong together.
Chocolate berry pavlova cake
Ingredients:
- 150 g (2/3 cup) of butter
- 150 g (3/4 cup) of sugar
- 6 egg yolks
- 1 tsp vanilla
- 3 tablespoons milk
- 170 g (1 1/3 cups) flour
- 60 g (2 tbsp) cocoa
- 1/2 tsp baking powder
- 1/2 tsp. salt
- 6 egg whites
- 220 g ( 1 cup + 1 tbsp) sugar
- 1/2 tsp salt
- 2 tbsp cocoa powder
- 1 tsp vanilla
- 30 g (2 tbsp) sugar
- 300 ml (1 cup + 2 tbsp) heavy cream
- 200 g (1 cup) berries
- 1 tsp vanilla extract
Instructions:
- Preheat the oven to 200° C (375°F). grease and line 2 cake molds.
- Cream sugar and butter until light and fluffy.
- Add egg yolks, vanilla, and milk. Continue beating.
- Sift flour, baking powder, salt, and cocoa powder.
- Add flour to butter mixture and mix until thoroughly combined
- Divide the batter equally into the two pans.
- Set aside.
- Using clean beaters and a clean bowl whisk egg whites until frothy. Gradually pour in sugar while continuing to whip the egg whites.
- Add vanilla extract
- Continue beating until you have a glossy and stiff meringue
- Divide the meringue in two.
- Spread meringue over the cake batter
- Dust meringue with cocoa powder and marble it into the meringue with the help of a spoon.
- Bake the cakes for 20- 25 min
- Let cool completely and then remove from the baking tin.
- Place cream, sugar, and vanilla in a chilled bowl.
- Beat cream until soft peaks are formed.
- Spread cream over one of the completely cooled cakes. If the cake is warm the vanilla cream will melt.
